Kristine’s Grandma Yamasaki Tamago, Japan

Ingredients:

7 eggs

2 Tbsp. sugar

1/4 cup water

1/2 pkg. shimaya (udon powder – optional)

1 Tbsp. soya sauce

1 Tbsp. mirin

dash of salt

Canola oil

Directions:

Mix eggs and sugar. In a separate bowl, mix water, shimaya, soya sauce, mirin and salt. Pour liquids into egg mixture and mix well. Heat oil in frying pan until hot, lower heat to medium. Pan should be coated with thin layer of oil. Add a thin layer of egg. Roll the egg like a crepe and move to side of pan. Add more oil and another layer of egg. Roll again. Repeat (three layers total).
